  • Cornstarch – A little cornstarch enhances the chewiness and also absorbs some of the melted butter to make your blondies less oily. Don’t skip it!
  • White Chocolate Chips –You can also use semi-sweet or dark chocolate chips if you prefer. Peanut butter or butterscotch chips would also be delicious!

How to Make Blondies

Effortless desserts are always a win in my books, and desserts don’t get much easier than freshly baked blondies! The batter comes together all in one bowl:

  • Mix the wet ingredients. First, cream together brown sugar with melted butter, then add the eggs and vanilla.
  • Add the dry ingredients. Beat the dry ingredients into the batter until just combined. Fold in the chocolate chips.

  • Bake. Transfer the blondie batter to a parchment-lined 8” baking pan. Bake at 350ºF for 30-34 minutes, then take the blondies out to cool completely before slicing.

How Do I Know If My Blondies Are Done?

These blondies are chewy and a little gooey in the center, with crisp edges. Your blondies are done baking when they turn golden on top and start to pull away from the sides of the pan. Stick a toothpick into the center of the blondies, and if it comes out clean, they’re done!

Recipe Tips

Keep the below tips in mind for the best homemade blondies that come out of the oven thick, chewy, and full of flavor every time:

  • Grease and line the pan. I recommend spraying the pan with a thin layer of cooking spray and then lining it with parchment paper. This helps to easily remove the bars from the pan. Since they’re so buttery, it also helps prevent them from sticking to the pan.
  • Use another size pan. You can bake your blondies in a 9” square pan rather than an 8”, just reduce the baking time by 5-10 minutes (the exact baking time will vary, so keep a close eye).
  • Don’t overcook. Check your blondies for doneness after 30 minutes (see above) and be careful that they don’t overbake. Overcooked brownies and blondies will be dry, hard, and crumbly.

How to Store Blondies

  • To Store. Wait until they’ve cooled completely and then transfer them to an airtight container. They’ll keep at room temperature for up to 5 days.
  • Freezer. Freeze these blondies airtight and thaw them to room temperature before eating. If you’re not freezing them individually wrapped, I recommend stacking them with parchment paper between layers to keep the bars from sticking.

Ingredients

  • ¾ cup (170g) unsalted butter, melted
  • 1 ¾ cups (384g) light brown sugar, packed
  • 2 large eggs
  • 1 ½ cup (210g) all-purpose flour
  • 1 tablespoon (9.5g) corn starch
  • 1 teaspoon (3.7g) baking powder
  • 1 teaspoon (5g) salt
  • 2 teaspoon (10ml) pure vanilla extract
  • 1 cup (180g) white chocolate chips

Instructions

  1. Preheat the oven to 350°F. Spray and a 8-inch pan with cooking spray and then line with parchment paper and set aside.
  2. Combine the butter with the sugar; beat together until well combined. Next add the eggs and vanilla extract and beat until well combined.
  3. Add the dry ingredients to the bowl and beat just until the flour is incorporated. Then add the white chocolate chips and beat until combined.
  4. Press the dough in a prepared pan and spread evenly. Bake at 350°F for 30-34 minutes or until a toothpick inserted into the middle comes out clean. Cool completely prior to cutting.

  • Add your favorite mix-ins: These would also be great with chopped nuts, peanut butter chips, mini M&Ms or Reese’s pieces.
